    Created from the extraordinary union of very different parcels of whisky, this mellow and fruity 26-year-old single malt is the fourth limited release in the Highland Distillery’s exclusive Bond House No. 1 Vintage Collection.

    It owes its plummy depths to two 1991 parcels which, at first, seem completely incongruous. From contrasting finishes, one gained spicy sweetness – the other, bold, meaty notes. But, brought together with rare skill, they form this whisky’s incredible harmony.

    Glenmorangie Grand Vintage Malt 1991

    This whisky began in Glenmorangie’s copper stills, the tallest in Scotland. Their height ensures only the finest vapors reach the top, for a smoother, more elegant spirit. Distilled in 1991, it was long aged in bourbon casks, then transferred into different casks for finishing, to gain new dimensions of flavor. Finally, after 26 years, Dr Bill knew this exceptional malt was ready to share.

Captured in their prime only by the skill of Glenmorangie’s whisky creators, the rare vintages of the Distillery’s Bond House No. 1 Collection are all exceptionally fine and smooth. The series celebrates the heritage of Bonded Warehouse No. 1 – the largest of the Distillery’s traditional warehouses, transformed into Glenmorangie’s majestic stillhouse in 1990. A year later, the spirit of Glenmorangie Grand Vintage Malt 1991 was distilled in its depths...

At that time, the art of “finishing” single malt by transferring it into other casks, was still in its early days. And, intrigued by the new tastes this technique offered their spirit, in 1991, Glenmorangie’s whisky creators devoted themselves to learning more. Decades later, inspired by their foresight, Dr Bill Lumsden, Glenmorangie’s Director of Whisky Creation, singled out two parcels of 1991 whisky, with an extraordinary ambition of his own.

The parcels Dr Bill selected were an unlikely match, having been finished in contrasting casks for more than a decade. While one gained spice and sweetness from oloroso sherry casks, the other found meat and truffle flavors in burgundy casks – yet, in these contradictions, Dr Bill saw something special. And, skillfully tempering their characters with a third parcel of spirit finished in new toasted oak, he created a deep, mellow malt which defies all expectation.

STARTER

This single malt is sensational with salmon – we like gravlax with star anise and coriander crème fraiche.

Main

Experiment with game: perhaps partridge, venison or grouse. Or try duck liver ballotine topped with burnt apple purée and toasted macadamia nuts, for a smoky surprise.

Dessert

Enjoy the whisky's deep sweetness alongside a Black Forest gateau-style dish, rich with chocolate brownie, whisky-soaked cherries and cream.
