White from black: Dark-skinned pinot noir and meunier grapes from Chandon California’s cool-climate vineyards are gently pressed and blended to create a fruit-filled white sparkling wine with structure and backbone. Winemakers use the méthode traditionnelle to craft this blanc de noirs, which is aged on lees for 15 months to add a warming complexity.
