Bodega Numanthia Termanthia 2013
This 100% tinta de toro is crafted from grapes grown on ungrafted vines more than 120 years old, in a single vineyard: Teso de los Carriles, roughly translated as "road on the hill." Picked by hand, the grapes are crushed by foot to gently extract the tannins and maintain their deep color before spending extended time on their skins. Six months’ aging in new French oak, then another 16 months in new French oak, imparts balance and complexity. Neither fined nor filtered, the wine is elegant, with well-integrated tannins.
Pair with robust dishes
To match the intensity of this wine, pair with meat dishes – roasted lamb, veal or pork. It also complements Cantonese cuisine, such as sweet and spicy roast duck.
For dessert, try pairing Termanthia with dark chocolate, or a distinctive but mild Spanish sheep’s milk cheese like Zamorano, or a nutty Manchego.
