Perfect for brunch: Procera Red Snapper
INGREDIENTS
60 mL Procera Gin
400g can whole peeled tomatoes stored in fridge
10 drops chipotle Tabasco
Procera salt (comes with a bottle of Procera Gin)
Limes
Dash of Worcestershire
Few drops sesame oil
Rosemary to garnish
2 large ice cubes
METHOD
Blend 400 grams of whole peeled tomatoes to reach your desired consistency. If you like your drinks without pulp, strain through a cheesecloth or fine mesh sieve.
To the blended tomatoes, add a large pinch of salt, a dash of Worcestershire, a few drops of sesame oil, 10 drops of chipotle Tabasco, the juice of one lime and 60 mL of Procera. Taste the mixture and adjust Procera salt and lime juice to taste.
Rim your glass with salt by pouring a little on a plate, rubbing the rim of your glass with lime (either half or full) and twisting the mouth of the glass on the plate. Add 2 large ice cubes to your glass.
Pour the Red Snapper mixture into the glass and garnish with a fresh stick of rosemary.
Perfect for sunset: Procera & Tonic
INGREDIENTS
60 mL Procera Gin
120 mL Tonic
Ice
Procera salt (comes with a bottle of Procera Gin)
METHOD
Fill a goblet with ice and add 60 mL Procera
Top your glass with 120 mL tonic and sprinkle salt into your glass to taste.
Feel free to experiment with the salt, placing a pinch on your tongue and following it with a sip of your P&T; this highlights the contrast of sweet and salty, wet and dry.
Perfect for evenings: Kijabe Martini
INGREDIENTS
125 mL Procera Gin (stored in the freezer)
Dry vermouth
Lemon
METHOD
Place a martini glass in the freezer 15 minutes before you plan to enjoy it.
Pour a few drops of dry vermouth into your chilled glass and swish it around making sure to cover the entire inside. Pour out any excess vermouth.
Pour 125 mL of chilled Procera into your glass.
Take a single peel from your lemon and twist it over the glass to release some of the essential oils, then rub the yellow side around the rim.
Place your lemon peel in your glass and enjoy a taste of Africa.
