Blend and Origin
Ruinart Dom Ruinart Rosé 2004
This champagne is a blend of chardonnay (81%) from the grands crus of Côte des Blancs and Montagne de Reims, and pinot noir wine (19%) from Sillery. It benefited from an excellent year that was largely warm and dry, and the low dosage of 4.5 grams per litre helps to create a well-balanced, healthily acidic style of rosé champagne.

From the land or from the sea
A simple salmon tataki or a centre-cut salmon fillet marinated in tamarind and oolong tea, served with seasoned pak choi, will enhance Dom Ruinart Rosé 2004.
Avoid intense flavours and serve with simply cooked poultry, such as smoked guinea fowl with a butternut squash purée.
Match the fruitiness of this rosé with forest berries accompanying an indulgent yet light white chocolate mousse.
