Pot stills: how cognac and single malt whisky are distilled

Tall, short, elegant or bulbous, pot stills play a rather important part in the making of single malt whisky and cognac. Distilling in batches with these striking copper vessels rather than column stills, the experts at Hennessy turn wine into cognac’s eau de vie, while those at Glenmorangie (which has the tallest stills in Scotland) and Ardbeg effectively distil single malt whisky’s spirit from beer.
