TASTING NOTES:
Soft and refreshing

Appearance

Pink with coppery highlights.

Aroma

The bouquet is filled with fruity aromas of wild red berries.

Taste

Although the champagne is dry, the first impression is of a sweet suppleness, which soon develops into a fruitiness imparted by the prominence of pinot noir. This champagne is at once mellow and refreshing.

BLEND & ORIGIN CHAMPAGNE

BLEND AND ORIGIN:
Mercier Rosé

A lively and fruity assemblage that is 60-65% pinot noir and 35-35% meunier (15-25% reserve wine), part of this blend is fermented on skins to impart its lovely structure.

It spends 18-30 months on lees, with an additional three months' ageing post-disgorgement to maintain its fresh and light aromas.

FOOD PAIRING MERCIER

FOOD PAIRING:
Keep it light

An assortment of charcuterie, or potted salmon served on toast, will pair brilliantly.

A large dish featuring a range of sushi will help to evoke this champagne's summery character. Or serve with a delicate poached salmon.

Sweetened redcurrants blended with crème fraiche and garnished with mint is an unexpected and intriguing pairing.
