Winter cocktail: a hot toddy with a twist

A warm cognac cocktail? ‘Not in this life!’ you might say, but warm cocktails made with cognac are actually all the rage, like our exotic Hennessy hot toddy. One of the top winter drinks for beating sub-zero temperatures, it’s up there with Irish coffee and mulled wine. Usually made with whisky, the hot toddy is a typically British cocktail – the word toddy supposedly comes from India and refers to a drink made of alcoholic liquor and hot water, sweetened and sometimes spiced with cloves. – and it’s perfect for spicing up those dark, cold wintry evenings. In this recipe, we give the cocktail a bit of a twist and recommend using cognac instead of whisky. Just add sugar and pandan leaf, which adds a subtle sweet and spice tropical note, a nudge to the origins of toddy to a couple of shots of Hennessy VSOP cognac in boiling water; you can also add a hint of lemon and a spoonful of honey. The cognac brings smoothness, warmth and texture to the palate while the pandan leaf and lemon give that extra kick. Move over, Irish coffee!
