Created from the extraordinary union of very different parcels of whisky, this mellow and fruity 26-year-old single malt is the fourth limited release in the Highland Distillery's exclusive Bond House No. 1 Vintage Collection.
It owes its plummy depths to two 1991 parcels which, at first, seem completely incongruous. From contrasting finishes, one gained spicy sweetness – the other, bold, meaty notes. But, brought together with rare skill, they form this whisky’s incredible harmony.

A palate of plummy perfection

Appearance

Rich ochre

Aroma

Mellow and deep. Scents of apricots, plums and baked apples play alongside chocolate notes, with a suggestion of truffles and star anise.

Taste

Subtle and peppery on the palate, with ripe plums, cherries, raspberries and stewed apples, coated in milk chocolate. Then a long finish filled with citrus notes, sweet spices and oak.

This whisky began in Glenmorangie&rsquos copper stills, the tallest in Scotland.
 

Their height ensures only the finest vapours reach the top, for a smoother, more elegant spirit.
 

Distilled in 1991, it was long aged in bourbon casks, then transferred into different casks for finishing, to gain new dimensions of flavour.
 

Finally, after 26 years, Dr Bill knew this exceptional malt was ready to share.

This single malt is sensational with salmon – we like gravlax with star anise and coriander crème fraiche.

Enjoy the whisky's deep sweetness alongside a Black Forest gateau-style dish, rich with chocolate brownie, whisky-soaked cherries and cream.
