In Dom Pierre Pérignon’s search for perfection, he discovered a method for creating a sparkling wine so refined that legend has it he exclaimed, “Come quickly, I am drinking the stars!” The spiritual father of champagne’s techniques are still used in the méthode champenoise today.
The art of plénitude
Overseen by Cellar Master Richard Geoffroy, the maison ensures each vintage is only disgorged once it has reached its plénitude – one of three peak levels of expression. The first occurs after around nine years, the second (P2) seven years later and the final (P3) after 25 years.
Exclusive plots for outstanding assemblage
Only the best pinot noir and chardonnay grapes are used to create Dom Pérignon’s vintage blancs and rosés. Vineyards across the 17 grands crus of Champagne and the legendary premier cru of Hautvillers help to create champagnes with the perfect balance of richness and finesse.
