Blend and Origin
2006 Château Cheval Blanc, Saint-Emiliion
Following a cold winter and warm summer, September was wet and mild. Rainfall this month caused some dilution and outbreaks of grey rot; however, rigorous sorting eliminated any affected grapes. The merlot in particular was of high quality. A blend of 54% merlot, 45% cabernet franc and 1% cabernet sauvignon, this wine was aged in 100% new oak for 16-17 months.

Take care not to overwhelm this vintage
While traditionally paired with red meat like beef or lamb, Bordeaux blends can also be the perfect complement to certain fish dishes. Try sea bass, monkfish, John Dory or turbot with this vintage to enjoy its ripe fruit flavours.
