TASTING NOTES:
FRUITY AND FINESSED

Appearance

A deep ruby.

Aroma

The 2006 reveals powerful aromas of ripe, red fruit and the subtle smokiness of Virginia tobacco, an impression imparted by barrel-ageing.

Taste

The first flavours are rich and full-bodied, with smooth merlot complementing the aromatic elegance of cabernet franc. The balance of generous fruitiness and rich tannins leads to a long finish.

Estate Director, Château Cheval Blanc

BLEND AND ORIGIN:
Château Cheval Blanc 2006

Following a cold winter and warm summer, September was wet and mild.

Rainfall this month caused some dilution and outbreaks of grey rot; however, rigorous sorting eliminated any affected grapes.

The merlot in particular was of high quality.

A blend of 54% merlot, 45% cabernet franc and 1% cabernet sauvignon, this wine was aged in 100% new oak for 16-17 months.

FOOD PAIRING CHÂTEAU CHEVAL BLANC

FOOD PAIRING:
TAKE CARE NOT TO OVERWHELM THIS VINTAGE

While traditionally paired with red meat like beef or lamb, Bordeaux blends can also be the perfect complement to certain fish dishes. Try sea bass, monkfish, John Dory or turbot with this vintage to enjoy its ripe fruit flavours.

A softly sweet dessert featuring apple or pear is an ideal match.
