Blend and Origin
2000 Château Cheval Blanc, Saint-Emiliion
This vintage – 53% merlot and 47% cabernet franc – benefited from warm, dry weather leading up to the harvest. The winter in 2000 was wet and mild, and the spring temperate but rainy. A dry and warm June was followed by a wet July, after which a long dry spell set in. Rigorous grape selection, expert blending and ageing in 100% new oak resulted in this outstanding wine.
This product can only be purchased by persons over 18 years of age.
Classic French dishes are the perfect choice
A creamy cheese soufflé will enhance the silkiness of this wine.
Game, and both red and white meat are natural matches with this sublime Saint-Emilion. For this intense red, try grilled steak with sautéed mushrooms, or beef Rossini with eggplant caviar.
Desserts featuring apple or pear, or a dark chocolate (at least 70% cocoa) are sure to delight.
