Rich and racy on the palate with a touch of floral as well as spice notes. A little oak adds a creamy feel and texture, while the acidity is firm and the finish is long and silky.
A serious rosé made from a blend of predominantly grenache, cinsault and rolle grapes picked from 20- to 25-year-old vines grown in mid-elevation vineyards.
The grapes are harvested between sunrise and noon, then de-stemmed and lightly crushed at 7-8°C to avoid oxidation.
Carefully selected for optimum ripeness, the free-run juice (the juice that collects from the weight of the grapes on top of one other) is blended with the slightly pressed juice, to keep the flavours pure, lively and intense.
This vintage has partially rested in French oak barrels (30%), giving it substance, structure and depth, and also in stainless steel tanks (70%), which keeps the fruit bright.
This is a rosé with a decent amount of structure that will pair with most seafood dishes. Try it alongside shellfish, including oysters, grilled mahi mahi with asparagus, smoked salmon with dill, and spaghetti alle vongole.
