Blend and Origin
Shiraz (95%) and small amounts of grenache (3%) and viognier (2%) were used to craft this wine. Wild yeasts with co-ferment viognier added lift and deep colour, while the grenache enhances juiciness and mid-palate spice notes. Fermentation maceration takes place over 80 days, followed by a further malolactic fermentation in French (80%) and American (20%) oak.
This product can only be purchased by persons over 18 years of age.
Food pairing:
Enhance the wine's savoury complexity
Main
The savoury complexity of this wine will pair beautifully with smoked aubergine, pepper and courgette lasagna. Try adding feta with a hint of chilli to match the faint spice on the palate. A fine alternative would be grilled veal or venison served with truffle mashed potato.
