Due to the weather, yields were smaller than previous years, and grapes were sourced from four of the best village sites. Cabernet sauvignon (72%), cabernet franc (19%), syrah (4%), petit verdot (3%) and merlot (2%) were blended and then aged in new oak and clay amphora.
As the extreme altitude of Ao Yun's vineyards can affect how the wine tastes, the team brought taste testing to sea level in Hong Kong.
