The winemaking team made changes to process for their 2016 release.
Using older oak creates a more elegant wine, while letting malolactic fermentation take place in barrels and clay jars helps with a lack of oxygen at high altitudes.
As this altitude can effect on how a wine tastes, the team brought taste testing to sea level in Hong Kong, and added syrah (4%) and petit verdot (2%) to the blend of cabernet sauvignon (74%) and cabernet franc (4%).
