Details
Elegance, freshness and complexity are the cornerstones of Ao Yun's winemaking philosophy, and this vintage – the Chinese estate's third – is a stunning representation of all three.
Voluptuous and spicy, with dense tannins and a mineral finish, the 2015 vintage captures the character of a warm year and is expected to develop further over the years to come.

BLEND & ORIGIN WINES

BLEND AND ORIGIN:
Ao Yun Vintage 2015

From a year of warm weather and excellent yields comes this blend of cabernet sauvignon (79%) and cabernet franc (21%) from the village vineyards of Adong, Shuori, Sinong and Xidang.

The high altitude means there is less oxygen, and so malolactic fermentation takes place in earthenware jars as well as oak barrels, with the wine aged for 12 months in 40% new barrels.

FOOD PAIRING AO YUN

FOOD PAIRING:
Match with Chinese flavours

Plump prawns in a warming Sichuan pepper sauce will find balance in this wine's complex character.

For this New World red, serve grilled duck breast in an orange sauce and topped with pea shoots, or try lamb chops in a sticky soy, honey and sesame glaze.
