A bountiful estate
The 18th-century Château de Sassy in Normandy, France is the home of Maison Sassy. Surrounded by bountiful grounds and forests, its orchards produce the 20 varieties of apples and pears that are pressed to create Maison Sassy cider.
Cider making
New directions
Drawing on Normandy’s long history of producing cider, friends Xavier d’Audiffret Pasquier and Pierre-Emmanuel Racine-Jourden have injected a modern twist. By keeping alcohol levels low and acidity levels high, their ciders are not too sweet and not too dry – ideal for mixing into cocktails or enjoying over ice.
