Cocktails at Home: Air Mail with Eminente Reserva 7 Years
The Air Mail cocktail is almost like a Caribbean version of the classic French 75. The Air Mail combines the strong flavours of rum, honey syrup and lime and the addition of champagne adds a beautiful touch of effervescence and balances out the sweetness and sourness. For this version of the Air Mail we are going for Eminente, a Cuban rum new to our shelves. It possesses the aesthetics of a traditional Cuban light rum but with the complexity and depth of a very old one.
THE STEP BY STEP RECIPE
Add all ingredients to a shaker with ice. Stir until chilled and then strain into two glasses. Top up with champagne.
Simply pour the boiling water onto the honey and stir until the honey has completely dissolved.
- 5 cL Eminente Reserva 7 Years
- 2-3 cL Runny honey
- 3 cL Fresh lime juice
- Moët & Chandon Impérial Brut
- 1 part boiling water
- 2 parts honey
- Example: 100 mL boiling water, 200 mL honey
