Shiraz and cabernet sauvignon have been blended in Australia since the 19th century. The shiraz brings savoury notes while cabernet sauvignon adds elegance, structure and complexity.
Cape Mentelle is dedicated to producing wines that celebrate nature. Wild yeast is used during the first fermentation period, while filtration and sulphur additions are minimal. -

Blend and Origin
A blend of shiraz (55%), cabernet sauvignon (40%), merlot (3%) and zinfandel (2%). Overall, this was a mild year for Australia's Margaret River, allowing the grapes to ripen early and evenly. Fermentation with wild yeasts and then a long period of maceration adds complexity. Secondary malolactic fermentation in French oak softens the acidity, and lees ageing for 16 months adds body.
